Eres un Sol is our latest Colombian lighter roast coffee. The name is taken from the Spanish idiom that literally means 'you are the light' but is more like the English phrase 'you're an angel' - in any case this coffee lives up to the moniker! (nb. we were thinking about calling it Here Comes The Sun but that probably would have brought law suits!) Anyho, this is a beautiful coffee full of summer sunshine, with notes of peppery olive oil and lemon popsicles. It is a fantastic funky brew while our experimental approach to the roast - inspired by the experimental drying process - has really paid off; complex aromas a-plenty for espresso and pour-over.
