Deepest Darkish is our darkest roast... but it's still a medium roast in theory! The bean seems to lend itself to going through to a darker style coffee, probably given it's process: SEMI-ANAEROBIC FERMENTATION. The freshly harvested coffee cherries are sealed for a few days prior to being washed and dried, thus helping to lock-in some of the natural flavours from the high altitude cultivation. When roasting, we get amazing waves of floral notes; from sweet frangipani to camomile, not to mention heaps of earthy caramel.
